It’s winter, you’re watching trash TV and you’re wrapped up in your fave blanket. What’s missing? That’s right… a sweet and spicy Chai Mulled Wine. But you’re probably thinking, chai… plus wine!? What’s going on here? Well, not all wines are made the same, but a deep Merlot with a bit of spice is *chef’s kiss*. Here’s how to make it.
    • 1 x 750mL bottle of merlot
    • 30mL brandy
    • 1 lemon, sliced and de-seeded
    • 1 apple, sliced and de-seeded
    • Juice of 1 orange
    • 1/3 cup honey
    • 1 cinnamon stick
    • 30g chai (if you're going by tea bags, about 10) 
    • Star anise to garnish

      Bust out your best Remy from Ratatouille impression and get all your liquids, fruit, honey and cinnamon into a saucepan.

      Set that lil guy to medium and stir to dissolve the honey - just don’t let it boil.

      Hot tip: Boiling will lower the amount of alcohol and leave you with a wine flavoured mocky-t. (Not the vibe we’re going for, but handy if you're doing a dry month).

      Once steaming, get that pan off the heat and chuck in the chai to steep. Let all the flavours mingle.

      After about 10 mins, or longer (depending on how intense you want it/impatient you are), you’re ready to get that drink into a mug and garnish.
