It’s much earthier and leathery in the best of ways due to it’s higher tannin content. There is more astringency on the palate and the texture is not as smooth. With gentle decanting, and 15 minutes resting time prior to pouring into glass however, the Amon-Ra became slightly less astringent and revealed more of a smoother palate and notes of chocolate black currant which were hidden upon first opening. Want to know a fun fact? The Ancient Egyptian God this wine was named after was actually known as ‘the hidden one’. So the name Amon-Ra is well suited to this mysterious drop. Tannins exist naturally in the skins of the grapes. They can also come from the grape stems and oak barrels. In wines of less quality, tannins are added in powder form hence why some cheaper wines can be aggressively bitter. In a well made wine such as this however, tannins add structure and enable the wine the gift of longevity as tannins are actually an antioxidant. This explains why red wines such as Cabernet Sauvignon and Shiraz can age up to 40 years or more, and be at their peak drinking at a later time. This wine is enjoyable now with a meal and gentle decanting, however it was made to be enjoyed further down the track. It must ideally be stored in a dark, temperature controlled cellar between constant temperatures of 13 and 15 degrees celsius. The wine will peak between 8 years and 15 years in the cellar. From 15 years onwards it will become a slightly lighter version of it’s current self, however in some ways more complex with characters in the spectrum of toasted choc hazelnut and spiced toffee that can only develop in this wine with bottle age/bottle maturation. The wine will also develop a tawny orange colour in it’s hue as oppose to the deep dark purple to ruby colour it has now. The wine is unfiltered meaning it is more savoury and creamy. Fruit driven, smooth as silk, berries, subtle oak, I cant imagine how much better it might be in years to come

most of the evaluation of this wine will be the greatest wine i ever taste in this wine range, although 2009/10 might be a bit too young to enjoy but for sure with after 3~5 years will be more enjoyable.
