500g ground beef
1 onion, diced
2 garlic cloves, minced
1 tbsp cumin
1 tbsp ground coriander
1-2 tbsp chilli powder (you decide the heat)
400g can diced tomatoes
400g can kidney beans (rinsed + drained)
1 can of lager or pale ale
Olive oil for cooking
Garnish: shredded cheese, sour cream, chopped green onion
Corn chips (for dipping)

In a large pot, heat a splash of oil and sauté your onion until soft.

Add the beef and brown it, breaking it up as you go.

Stir in garlic and spices – let them toast and get fragrant.

Add tomatoes, beans, and pour in your beer. Give it a good mix.

Let it simmer uncovered for 20–30 mins. It’ll thicken and smell amazing.

Serve in bowls, load up with cheese, sour cream, green onion – the works.
