Beer Chilli

    • 500g ground beef
    • 1 onion, diced
    • 2 garlic cloves, minced
    • 1 tbsp cumin
    • 1 tbsp ground coriander
    • 1-2 tbsp chilli powder (you decide the heat)
    • 400g can diced tomatoes
    • 400g can kidney beans (rinsed + drained)
    • 1 can of lager or pale ale
    • Olive oil for cooking
    • Garnish: shredded cheese, sour cream, chopped green onion
    • Corn chips (for dipping)

      In a large pot, heat a splash of oil and sauté your onion until soft.

      Add the beef and brown it, breaking it up as you go.

      Stir in garlic and spices – let them toast and get fragrant.

      Add tomatoes, beans, and pour in your beer. Give it a good mix.

      Let it simmer uncovered for 20–30 mins. It’ll thicken and smell amazing.

      Serve in bowls, load up with cheese, sour cream, green onion – the works.
