A mild climate has helped produce a vibrant Italian-style Pinot Grigio. The fruit was handpicked, crushed, destemmed and pressed to stainless steel. Racked and inoculated with a selected aromatic yeast and allowed to cool ferment at 16 degrees to retain varietal freshness and delicate aromas. Matured on lees for 6 months to enhance texture and weight before being bottled.
