Harvested from our two premium Chardonnay vineyards in Orange - Coole Park and Balmoral. Fruit was whole berry pressed, and transferred to 1 to 4 year old French oak puncheons with light solids for fermentation. Parcels underwent 50% malolactic fermentation to develop some creaminess while retaining bright lively acidity. Matured for 6 months with fortnightly lees stirring to build complexity and texture. Blended and lightly filtered. Bottled September 2024.
